Creamy Sausage, Kale, and Potato Soup
Ingredients:
– 1 lb Italian sausage (mild or spicy, as per preference)
– 1 medium onion, diced
– 3 cloves garlic, minced
– 4 cups chicken broth
– 1 cup water
– 4 large russet potatoes, peeled and diced
– 1 bunch kale, stems removed and leaves chopped
– 1 cup heavy cream
– Salt and pepper, to taste
– Red pepper flakes, to taste (optional)
– 4 slices of bacon, cooked and crumbled (optional)
Instructions:
1. **Cook the Sausage**: In a large pot, cook the sausage over medium heat until browned and crumbled. Remove from the pot and set aside, leaving about 1 tablespoon of drippings in the pot.

2. **Sauté the Aromatics**: In the same pot, add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
3. **Simmer the Soup**: Add the chicken broth and water to the pot. Stir in the diced potatoes and bring to a boil. Reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
4. **Add the Kale**: Stir in the chopped kale and cooked sausage. Let it simmer for another 5 minutes until the kale is wilted.
5. **Finish the Soup**: Stir in the heavy cream and let it heat through. Season with salt, pepper, and red pepper flakes (if using) to taste.
6. **Serve**: Ladle the soup into bowls and top with crumbled bacon, if desired.
