Ingredients:

  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 stalks of celery, chopped
  • 2 zucchinis, chopped
  • 2 potatoes, peeled and diced
  • 1 cup peas, fresh or frozen
  • 2 tablespoons olive oil
  • 4 cups vegetable broth (or chicken broth if not vegetarian)
  • 2 cups water
  • Salt and pepper to taste
  • 1 teaspoon dried herbs (such as thyme or oregano)
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Sauté Vegetables:
    • In a large pot, heat the olive oil over medium heat.
    • Add the chopped onion, carrots, and celery. Sauté until the onions become translucent and the vegetables start to soften, about 5 minutes.
  2. Add Remaining Vegetables:
    • Stir in the zucchinis and potatoes. Cook for a few more minutes, just enough to start softening the added vegetables.
  3. Pour in Liquids:
    • Add the vegetable broth and water to the pot. Bring the mixture to a boil.
  4. Simmer:
    • Once boiling, reduce the heat to low and let it simmer. Cover the pot and cook for about 20 minutes, or until the potatoes are tender.
  5. Add Peas and Season:
    • Add the peas and dried herbs. Season with salt and pepper to taste. Continue to simmer for another 5 minutes.
  6. Serve:
    • Check the seasoning and adjust if necessary. Serve hot, garnished with fresh chopped parsley.
