Easy Vegetable Soup Recipe
Ingredients:
- 1 onion, chopped
- 2 carrots, peeled and chopped
- 2 stalks of celery, chopped
- 2 zucchinis, chopped
- 2 potatoes, peeled and diced
- 1 cup peas, fresh or frozen
- 2 tablespoons olive oil
- 4 cups vegetable broth (or chicken broth if not vegetarian)
- 2 cups water
- Salt and pepper to taste
- 1 teaspoon dried herbs (such as thyme or oregano)
- Fresh parsley, chopped, for garnish
Instructions:
- Sauté Vegetables:
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, carrots, and celery. Sauté until the onions become translucent and the vegetables start to soften, about 5 minutes.
- Add Remaining Vegetables:
- Stir in the zucchinis and potatoes. Cook for a few more minutes, just enough to start softening the added vegetables.
- Pour in Liquids:
- Add the vegetable broth and water to the pot. Bring the mixture to a boil.
- Simmer:
- Once boiling, reduce the heat to low and let it simmer. Cover the pot and cook for about 20 minutes, or until the potatoes are tender.
- Add Peas and Season:
- Add the peas and dried herbs. Season with salt and pepper to taste. Continue to simmer for another 5 minutes.
- Serve:
- Check the seasoning and adjust if necessary. Serve hot, garnished with fresh chopped parsley.
