Ingredients:

– 1 tablespoon butter
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 4 cups broccoli florets
– 4 cups chicken broth (or vegetable broth)
– 2 cups shredded cheddar cheese
– 1 cup heavy cream or milk
– Salt and pepper to taste
– Optional: Additional cheddar cheese and fresh parsley for garnish

1. **Sauté the Onion and Garlic:**
– In a large pot, melt the butter over medium heat.
– Add the chopped onion and cook until soft and translucent, about 5 minutes.
– Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

2. **Cook the Broccoli:**
– Add the broccoli florets to the pot along with the chicken or vegetable broth.
– Bring the mixture to a boil, then reduce the heat and simmer for about 10-15 minutes, or until the broccoli is tender.

3. **Blend the Soup:**
– Use an immersion blender to puree the soup to your desired consistency. If you prefer a chunkier soup, blend only half of the mixture.
– Alternatively, you can transfer the soup in batches to a blender and blend until smooth.

4. **Add the Cheese and Cream:**
– Stir in the shredded cheddar cheese and continue to stir until fully melted and smooth.
– Add the heavy cream or milk and stir to combine. Heat the soup gently until it’s warmed through, but do not bring it to a boil.

5. **Season and Serve:**
– Season the soup with salt and pepper to taste.
– Ladle the soup into bowls and garnish with additional cheddar cheese and fresh parsley, if desired.
