Dumpling Soup with Leafy Greens and Green Onions
Ingredients:

– 1/2 pound ground pork or chicken
– 1 cup finely chopped napa cabbage
– 2 green onions, finely chopped
– 1 tablespoon soy sauce
– 1 tablespoon sesame oil
– 1 teaspoon grated ginger
– 1 garlic clove, minced
– 1 package wonton wrappers
– **For the Soup:**
– 6 cups chicken or vegetable broth
– 2 cups baby spinach or bok choy
– 2 green onions, sliced
– 1 tablespoon soy sauce
– 1 teaspoon sesame oil
– 1/2 teaspoon chili flakes (optional)
– Salt and pepper to taste

1. **Prepare the Dumplings:**
– In a bowl, mix ground pork or chicken, chopped napa cabbage, green onions, soy sauce, sesame oil, ginger, and garlic until well combined.
– Place a small spoonful of the filling in the center of each wonton wrapper.
– Moisten the edges of the wrapper with water, fold it over to form a triangle, and press to seal the edges. Make sure there are no air pockets.
– Fold the two corners of the triangle towards each other and press to seal.
2. **Cook the Dumplings:**
– Bring a large pot of water to a boil. Add the dumplings in batches and cook for about 4-5 minutes or until they float to the top. Remove with a slotted spoon and set aside.
3. **Prepare the Soup:**
– In a large pot, bring the chicken or vegetable broth to a boil.
– Add the soy sauce, sesame oil, and chili flakes (if using).
– Add the baby spinach or bok choy and cook until wilted.
– Add the cooked dumplings to the soup and simmer for another 2-3 minutes.
4. **Serve:**
– Ladle the soup into bowls, making sure to include several dumplings in each serving.
– Garnish with sliced green onions.
– Season with salt and pepper to taste.
