Creamy Lentil Soup Recipe
Ingredients:
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 tablespoon olive oil
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 4 cups vegetable broth
- Salt and pepper, to taste
- 1/2 cup coconut milk or cream
- Fresh cilantro, for garnish
- Greek yogurt, for serving
- Paprika or chili powder, for garnish

- Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and carrot. Cook until the vegetables are softened, about 5 minutes.
- Add Spices: Stir in the turmeric, cumin, and coriander, cooking for another minute until fragrant.
- Cook Lentils: Add the rinsed lentils and vegetable broth. Bring the mixture to a boil, then reduce heat and simmer for about 20 minutes, or until the lentils are soft.
- Blend the Soup: Once the lentils are cooked, use an immersion blender to puree the soup until smooth. You can also use a regular blender, working in batches if necessary.
- Add Cream: Stir in the coconut milk or cream, and season with salt and pepper. Heat through.
- Serve: Ladle the soup into bowls. Top each serving with a dollop of Greek yogurt, a sprinkle of paprika or chili powder, and fresh cilantro leaves.
