Cauliflower Pizza Bites

 

 


Ingredients

 

(Makes about 12 bites)
1 medium cauliflower head, chopped into florets
50g grated mozzarella cheese
30g grated Parmesan cheese
1 large egg
1 tsp garlic powder
1 tsp dried oregano
Salt and pepper, to taste
12 mini pepperoni slices (optional)
Pizza sauce or marinara sauce (for dipping)
Fresh basil leaves (optional, for garnish)
Method
1.⁠ ⁠Prepare the Cauliflower:

Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.
In a food processor, pulse the cauliflower florets until they resemble rice-like grains.
Transfer the cauliflower to a microwave-safe bowl and microwave for 4–5 minutes until softened.
Let it cool slightly, then place the cauliflower in a clean kitchen towel and squeeze out as much excess moisture as possible.
2.⁠ ⁠Make the Cauliflower Base:

In a large bowl, combine the cauliflower, grated mozzarella, Parmesan, egg, garlic powder, oregano, salt, and pepper.
Mix until everything is well combined and forms a dough-like consistency.
3.⁠ ⁠Shape the Pizza Bites:

Take about 1–2 tablespoons of the mixture and roll it into small balls.
Flatten each ball slightly into a bite-sized round and place them on the prepared baking tray.
4.⁠ ⁠Bake:

Bake the cauliflower pizza bites in the preheated oven for 12–15 minutes, or until golden brown and crispy around the edges.
5.⁠ ⁠Add Toppings:

Once baked, top each pizza bite with a mini pepperoni slice (if using) and a bit of extra cheese.
Return them to the oven for an additional 3–5 minutes, or until the cheese is melted and bubbly.
6.⁠ ⁠Serve:

Garnish with fresh basil leaves, if desired, and serve with pizza or marinara sauce for dipping.
