MALTESE WIDOW’S SOUP :
A conventional Maltese generous soup made with new vegetables. In this soup it is standard to include eggs and the prevalent Maltese Cheese Gbejna at the end
Ingredients
1 Onion, diced
3 Cloves Garlic, crushed
2 Potatoes, chopped
3 Carrots, sliced
1 Kohlrabi, chopped (Gidra)
1 Container Wide beans (Ful)
3/4 Container Solidified Peas
Small Cauliflower cut into nibble measured pieces
1/4 Glass Chopped Parsley also additional for garnish
1 Teaspoon Mellow Curry
1/4 Teaspoon Blended Spice
2 Tbls Tomato Glue (Kunserva)
Chicken Stock (sufficient to cover the vegetables)
Salt/pepper
Fresh Gbejniet (New Maltese Cheeslets)

Method:
Saute garlic and onion in a tablespoon butter and olive oil until soft.
Add potatoes, carrots, kohlrabi, wide beans, peas and cauliflower, blend through at that point include the curry, blended flavor, tomato glue and stock. Season with salt and pepper.
Bring to bubble, cover and stew for almost 30 minutes or until vegetables are fair cooked.
Add gbejniet (maltese cheeselets) and eggs, cover and cook for a assist 20 minutes.
Garnish with parsley and mix through.
