Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 4 cups beef broth
  • 2 cups water
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup elbow macaroni
  • Parmesan cheese, grated (for serving)

  1. Brown the Beef:
    • In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Sauté Vegetables:
    • Add the onion, garlic, bell pepper, carrots, and celery to the pot with the beef. Cook until vegetables are softened, about 5-7 minutes.
    • Stir in the oregano, basil, salt, and pepper.
  3. Add Liquids and Simmer:
    • Pour in the beef broth, water, diced tomatoes, and tomato sauce. Bring to a boil.
    • Once boiling, reduce heat and let simmer for about 20 minutes, allowing flavors to meld.
  4. Cook the Macaroni:
    • Add the elbow macaroni to the pot and continue to simmer until the pasta is tender, about 10-12 minutes.
  5. Serve:
    • Ladle the soup into bowls and sprinkle with grated Parmesan cheese.
