Hearty Vegetable and Ground Meat Soup
Ingredients:
– 1 lb ground beef or turkey
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 1 red bell pepper, chopped
– 1 green bell pepper, chopped
– 2 carrots, sliced
– 2 celery stalks, chopped
– 1 can (14.5 oz) diced tomatoes
– 4 cups beef or vegetable broth
– 1 cup water
– 1 cup barley or rice
– 1 tsp dried oregano
– 1 tsp dried basil
– Salt and pepper to taste
– 1 cup frozen green beans
– 1 cup frozen peas
Instructions:
1. In a large pot or Dutch oven, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
2. Add the chopped onion and minced garlic to the pot and cook until the onion is translucent.
3. Stir in the chopped bell peppers, carrots, and celery. Cook for about 5 minutes until the vegetables start to soften.
4. Add the diced tomatoes, broth, water, and barley or rice to the pot. Stir to combine.
5. Season with dried oregano, dried basil, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the barley or rice is cooked and the vegetables are tender.
6. Add the frozen green beans and peas to the pot and cook for an additional 10 minutes.
7. Taste and adjust the seasoning if needed.
8. Serve hot and enjoy your hearty vegetable and ground meat soup!
