The Best Chicken Noodle Soup

– 1 tablespoon olive oil
– 1 onion, diced

– 2 carrots, sliced
– 2 stalks of celery, sliced
– 2 cloves of garlic, minced
– 8 cups chicken broth
– 2 Cups cooked chicken, shredded

– 2 cups egg noodles
– 1 teaspoon dried thyme
– Salt and pepper to taste
– Fresh parsley for garnish

- In a large pot, heat the olive oil over medium heat. Add chopped onions, sliced carrots and sliced celery. Cook until vegetables are tender, about 5 to 7 minutes.
2.Add the minced garlic to the pot and cook for another minute until fragrant.
- Pour in the chicken broth and bring to the boil.
- Once boiling, reduce the heat to low and add the shredded chicken, egg noodles and dried thyme.Simmer for 10 to 12 minutes until the pasta is cooked through.
- Season with salt and pepper.
- Before serving, pour the soup into bowls and garnish with fresh parsley.Preparation time: 10 minutes Cooking time: 20 minutes Total time: 30 minutes
