**Ingredients:**

– 1 lb (450g) steak (sirloin, ribeye, or tenderloin), cut into bite-sized cubes
– 1 lb (450g) baby potatoes, halved
– 3 tbsp olive oil, divided
– 3 cloves garlic, minced
– 1 tsp smoked paprika
– 1 tsp garlic powder
– 1 tsp onion powder
– 1 tbsp fresh parsley, chopped
– Salt and pepper to taste
– Optional: 1 tbsp butter for added richness

**Instructions:**

1. **Prepare the Potatoes:**
– Preheat your oven to 400°F (200°C).
– In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
– Spread the potatoes on a baking sheet in a single layer. Roast in the oven for about 25-30 minutes or until golden and crispy, stirring halfway through.

2. **Cook the Steak Bites:**
– While the potatoes are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat.
– Add the steak bites to the hot skillet. Season with salt and pepper. Sear the steak on all sides until browned, about 3-5 minutes, depending on your desired level of doneness.
– Add minced garlic to the skillet and cook for an additional 1-2 minutes, stirring to coat the steak bites.

3. **Combine and Serve:**
– Once the potatoes are done roasting, remove them from the oven and add them to the skillet with the steak bites.
– Optional: Add butter to the skillet and toss everything together until the butter is melted and everything is well-coated.
– Sprinkle fresh parsley over the top for garnish.
