Ingredients:

  • For the Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/3 cup sugar
    • 6 tablespoons unsalted butter, melted
  • For the Cheesecake Filling:
    • 2 packages (8 ounces each) cream cheese, softened
    • 1/2 cup granulated sugar
    • 2 tablespoons all-purpose flour
    • 2 large eggs
    • 2 teaspoons lemon zest
    • 1/4 cup lemon juice
    • 1 teaspoon vanilla extract
  • For the Topping:
    • 1/2 cup sour cream
    • 2 tablespoons powdered sugar
    • 1/2 teaspoon vanilla extract
    • Additional lemon zest for garnish
    • Crushed graham crackers for sprinkling

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • Mix graham cracker crumbs, sugar, and melted butter until well combined.
    • Press the mixture firmly into the bottom of a lined 8×8-inch baking pan.
    • Bake for about 8 minutes or until set. Remove from oven and cool.
  2. Make the Cheesecake Filling:
    • In a large bowl, beat cream cheese, sugar, and flour until smooth and creamy.
    • Add eggs one at a time, beating just until combined.
    • Mix in lemon zest, lemon juice, and vanilla extract.
    • Pour over the prepared crust and smooth the top.
  3. Bake the Cheesecake:
    • Bake for about 25 minutes, or until the filling is set.
    • Remove from oven and cool for about 30 minutes.
  4. Prepare the Topping:
    • Mix sour cream, powdered sugar, and vanilla extract until smooth.
    • Spread evenly over the cooled cheesecake.
    • Sprinkle additional lemon zest and crushed graham crackers on top.
  5. Chill:
    • Refrigerate the cheesecake bars for at least 3 hours or overnight until firm.
  6. Serve:
    • Cut into bars and serve chilled.
