Recipe for Lemon Cheesecake Bars
Ingredients:
- For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 6 tablespoons unsalted butter, melted

Instructions:
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- Mix graham cracker crumbs, sugar, and melted butter until well combined.
- Press the mixture firmly into the bottom of a lined 8×8-inch baking pan.
- Bake for about 8 minutes or until set. Remove from oven and cool.
- Make the Cheesecake Filling:
- In a large bowl, beat cream cheese, sugar, and flour until smooth and creamy.
- Add eggs one at a time, beating just until combined.
- Mix in lemon zest, lemon juice, and vanilla extract.
- Pour over the prepared crust and smooth the top.
- Bake the Cheesecake:
- Bake for about 25 minutes, or until the filling is set.
- Remove from oven and cool for about 30 minutes.
- Prepare the Topping:
- Mix sour cream, powdered sugar, and vanilla extract until smooth.
- Spread evenly over the cooled cheesecake.
- Sprinkle additional lemon zest and crushed graham crackers on top.
- Chill:
- Refrigerate the cheesecake bars for at least 3 hours or overnight until firm.
- Serve:
- Cut into bars and serve chilled.
