Ingredients:

  • 1.5 pounds beef stew meat, cut into cubes
  • 3 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 large potatoes, peeled and cubed
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1 cup beef broth
  • Fresh parsley, chopped for garnish

  1. Prep and Brown the Beef:
    • Season beef cubes generously with salt and pepper.
    • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the beef cubes and sear until they are browned on all sides, about 6-8 minutes. Remove beef from the skillet and set aside.
  2. Cook Potatoes:
    • In the same skillet, add the remaining tablespoon of olive oil. Add the cubed potatoes and cook until they start to brown, about 5-7 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  3. Make the Glaze:
    • Reduce the heat to medium. To the skillet with the potatoes, add soy sauce, honey, Worcestershire sauce, smoked paprika, and dried thyme. Stir to combine.
    • Return the browned beef to the skillet. Pour in beef broth and stir. Allow the mixture to come to a simmer.
  4. Simmer:
    • Reduce the heat to low and let the beef and potatoes simmer gently for about 20-25 minutes, or until the potatoes are tender and the beef is cooked through and tender.
  5. Garnish and Serve:
    • Sprinkle chopped parsley over the cooked beef and potatoes just before serving.
