Ingredients:

  • For the Pork Chops:
    • 4 bone-in pork chops, about 1-inch thick
    • Salt and freshly ground black pepper
    • 2 tablespoons olive oil
    • Fresh thyme for garnish
  • For the Bread Stuffing:
    • 1 loaf of bread, cut into cubes (about 6 cups)
    • 1/4 cup unsalted butter
    • 1 onion, finely chopped
    • 2 celery stalks, finely chopped
    • 2 cloves garlic, minced
    • 1 teaspoon dried thyme
    • 1 teaspoon dried sage
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 1/2 cups chicken broth
    • Optional: 1/2 cup chopped nuts (walnuts or pecans) and/or dried cranberries

Instructions:

  1. Prepare the Bread Stuffing:
    • Preheat your oven to 350°F (175°C).
    • Spread the bread cubes on a baking sheet and bake for about 10 minutes until dry and golden. Transfer to a large mixing bowl.
    • In a large skillet, melt butter over medium heat. Add onions, celery, and garlic, and sauté until soft, about 5-7 minutes.
    • Stir in the thyme, sage, salt, and pepper, then pour this mixture over the bread cubes. Add the nuts and cranberries if using.
    • Gradually pour chicken broth over the mixture, tossing gently until evenly moistened.
    • Transfer the stuffing to a greased baking dish and cover with foil.
    • Bake for 30 minutes, then remove the foil and bake for another 10-15 minutes until the top is crispy.
  2. Cook the Pork Chops:
    • Season the pork chops generously with salt and pepper.
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the pork chops and sear until golden brown on both sides, about 5-7 minutes per side depending on thickness, until the internal temperature reaches 145°F (63°C).
    • Remove from heat and let rest for a few minutes.
  3. Serve:
    • Serve the pork chops hot, topped with fresh thyme.
    • Accompany with a generous portion of the bread stuffing.
