Cheesy Bread Pie Recipe

 

 

 

Ingredients

  • For the Dough:
    • 3 cups (375g) all-purpose flour
    • 1 tsp sugar
    • 1 tsp salt
    • 2 tsp instant yeast
    • 3/4 cup (180ml) warm milk
    • 1/4 cup (60ml) warm water
    • 3 tbsp olive oil or melted butter
  • For the Cheese Filling:
    • 2 cups shredded mozzarella cheese
    • 1 cup ricotta cheese or cottage cheese
    • 1/2 cup crumbled feta cheese
    • 1 egg (beaten)
    • 1/2 tsp salt
    • 1/4 tsp black pepper
  • For the Topping:
    • 1 egg yolk (beaten, for brushing)
    • 1 tbsp melted butter (optional, for extra shine)
    • Fresh parsley or cilantro (chopped, for garnish)

Instructions

  1. Prepare the Dough:
    • In a large mixing bowl, combine flour, sugar, salt, and yeast.
    • Add the warm milk, warm water, and olive oil. Mix and knead until the dough is smooth and elastic (about 8-10 minutes by hand or 5 minutes with a dough hook).
    • Cover the dough with a damp cloth and let it rise for 1-2 hours until it doubles in size.
  2. Prepare the Cheese Filling:
    • In a medium bowl, mix mozzarella, ricotta (or cottage cheese), feta, egg, salt, and pepper until combined.
  3. Shape the Dough:
    • Punch down the dough and roll it out into a large circle, about 12 inches in diameter.
    • Place the dough on a baking sheet lined with parchment paper.
  4. Add the Cheese Filling:
    • Spread the cheese mixture over the center of the dough, leaving about 2 inches of border around the edges.
    • Fold the edges of the dough over the filling, partially covering it, to form a crust. Pinch the edges to seal.
  5. Bake:
    • Preheat the oven to 200°C (400°F).
    • Brush the crust with the beaten egg yolk for a golden finish.
    • Bake for 20-25 minutes, or until the crust is golden brown and the cheese is bubbling.
  6. Finish and Serve:
    • Brush the baked pie with melted butter for extra flavor.
    • Garnish with freshly chopped parsley or cilantro.
    • Slice and serve warm.
