Meat and Potato Soup
Ingredients:

- 1 lb ground beef or turkey
- 3 large potatoes, peeled and diced
- 1 onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 4 cups beef or chicken broth
- 2 teaspoons dried thyme
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Optional: chopped parsley for garnish
Instructions:
- Cook the Meat: In a large pot, heat olive oil over medium heat. Add the ground meat and cook until browned. Remove the meat and set aside.
- Sauté Vegetables: In the same pot, add more oil if needed. Sauté the onions, carrots, and celery until they start to soften, about 5 minutes.
- Add Potatoes and Broth: Add the diced potatoes to the pot along with the cooked meat. Pour in the broth and bring to a boil.
- Simmer the Soup: Reduce heat to a simmer and add thyme, salt, and pepper. Cover and let simmer for about 20 minutes, or until the potatoes are tender.
- Finish and Serve: Check the seasoning and adjust as necessary. Serve hot, garnished with chopped parsley if desired.
