Ingredients:

  • 1 lb ground beef or turkey
  • 3 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups beef or chicken broth
  • 2 teaspoons dried thyme
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Optional: chopped parsley for garnish

Instructions:

  1. Cook the Meat: In a large pot, heat olive oil over medium heat. Add the ground meat and cook until browned. Remove the meat and set aside.
  2. Sauté Vegetables: In the same pot, add more oil if needed. Sauté the onions, carrots, and celery until they start to soften, about 5 minutes.
  3. Add Potatoes and Broth: Add the diced potatoes to the pot along with the cooked meat. Pour in the broth and bring to a boil.
  4. Simmer the Soup: Reduce heat to a simmer and add thyme, salt, and pepper. Cover and let simmer for about 20 minutes, or until the potatoes are tender.
  5. Finish and Serve: Check the seasoning and adjust as necessary. Serve hot, garnished with chopped parsley if desired.
