Loaded Tomato Soup
I don’t take all the credit for that. My amazing aunt (who is actually like a sister to me) made something like this with tortellini and sausage. It seemed like a great basic idea for some lentil and vegetable pasta, and she’s the person who taught me to cook more than just boxed cheese pasta, so she needs a lot of credit!
INGREDIENT
1 small can of tomato paste
32 oz broth

1 can of whole coconut milk
1 box of lentil noodles
2 c chopped broccoli
1-2 c chopped mushrooms
Spices to taste:

Sea salt
Black pepper
Garlic
In a pot Saute broccoli and mushrooms with a little avocado oil, salt and pepper. Cook pasta separately and drain. After cooking, add broth, tomato paste and coconut milk to the vegetables.Stir well to combine. The result is a thick, creamy soup. Add the pasta and additional salt, pepper and garlic to taste.
