Custard Roll

 

 

 

Ingredients:

**For the Custard:**
– 2 cups milk
– 1/2 cup granulated sugar
– 1/4 cup cornstarch
– 4 large egg yolks
– 2 teaspoons vanilla extract
– 2 tablespoons unsalted butter

**For the Roll:**
– 4 large eggs
– 1/2 cup granulated sugar
– 1 teaspoon vanilla extract
– 1/2 cup all-purpose flour
– 1/2 teaspoon baking powder
– Powdered sugar, for dusting

Instructions:

 

1. **Prepare the Custard:**
– In a medium saucepan, heat the milk until it starts to simmer.
– In a separate bowl, whisk together the sugar, cornstarch, and egg yolks until well combined.
– Slowly pour the hot milk into the egg mixture, whisking constantly to temper the eggs.
– Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until the mixture thickens and starts to boil.
– Remove from heat and stir in the vanilla extract and butter until smooth.
– Transfer the custard to a bowl, cover with plastic wrap (pressing it directly onto the surface to prevent a skin from forming), and let it cool completely.

2. **Prepare the Roll:**
– Preheat your oven to 350°F (175°C).
– Line a baking sheet with parchment paper and lightly grease it.
– In a large bowl, beat the eggs, sugar, and vanilla extract together until thick and pale.
– Sift the flour and baking powder together, then gently fold them into the egg mixture until just combined.
– Pour the batter onto the prepared baking sheet and spread it out evenly.
– Bake for 10-12 minutes, or until the cake is lightly golden and springs back when touched.

3. **Assemble the Roll:**
– While the cake is still warm, dust a clean kitchen towel with powdered sugar.
– Turn the cake out onto the towel, then carefully peel off the parchment paper.
– Starting from a short side, roll the cake up with the towel and let it cool completely.
– Once cooled, unroll the cake and spread the custard evenly over the surface.
– Roll the cake back up (without the towel) and transfer to a serving platter.
– Dust the top with powdered sugar before serving.
