Creamy Coconut Shrimp Soup

 

 

 

Ingredients:

  • 400ml coconut milk
  • 200g shrimp, peeled
  • 1 tbsp oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp turmeric
  • 1 tsp curry powder
  • 500ml chicken or vegetable broth
  • 1 tbsp fish sauce
  • Juice of 1 lime
  • Salt to taste
  • Fresh cilantro, chopped

Instructions:

  1. In a pot, heat oil over medium. Add onion and garlic, sauté until soft.
  2. Stir in turmeric and curry, cook for 1 min.
  3. Pour in broth and coconut milk. Bring to a simmer.
  4. Add shrimp, cook until pink.
  5. Stir in fish sauce, lime juice, and salt.
  6. Serve hot, garnished with cilantro.
