White Bean Soup –
Just a few minutes to prepare this delicious recipe and about 40 minutes to enjoy it.
All you need is:
- 2 tablespoons extra virgin olive oil
- 1/2 cup chopped onion •1/2 cup chopped carrot
- 1/2 cup chopped celery
- 4 garlic cloves, sliced •1 cup chopped ripe tomatoes
- 2 10-ounce cans prepared cannellini beans, rinsed
- 1 quart chicken broth
- 1 10-ounce bag baby spinach
- 1/4 cup grated Romano cheese
- 1 teaspoon salt
- 1 /2 teaspoon ground black pepper
1-Heat the olive oil over medium heat in a pot large enough to hold the finished recipe.

2-When the oil is hot, add onion, garlic, carrot, celery, tomato, salt, pepper and sauté for 5 minutes.
3-and the broth, a can of rinsed beans and bring to the boil. Cover the pot and reduce the heat to a simmer for 15 minutes.4-Use the back of a spoon to mash the beans to create a creamy soup.
5-Add the second can of beans and spinach and cook over low heat for 10 minutes.
6-Remove the soup from the heat, let it rest for 2 minutes and then add the Romano cheese.

Serve with a drizzle of extra virgin olive oil and a pinch of cheese
