– 1 pound pork tenderloin, cut into bite-sized pieces
– 2 tablespoons olive oil
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 teaspoon garlic powder
– 1 teaspoon smoked paprika
– 1/2 teaspoon onion powder
– 1/2 teaspoon dried thyme
– 1/4 cup honey
– 2 tablespoons soy sauce
– 1 tablespoon apple cider vinegar
– 1 tablespoon Dijon mustard
– 1 clove garlic, minced
– 1 tablespoon fresh parsley, chopped (for garnish)

**Instructions:**

1. **Prepare the Pork:**
– In a large bowl, mix together the salt, black pepper, garlic powder, smoked paprika, onion powder, and dried thyme.
– Add the pork pieces to the bowl and toss to coat evenly with the seasoning mixture.

2. **Cook the Pork:**
– Heat the olive oil in a large skillet over medium-high heat.
– Add the seasoned pork bites to the skillet and cook for about 5-7 minutes, turning occasionally, until they are browned on all sides and cooked through. Remove the pork from the skillet and set aside.

3. **Make the Glaze:**
– In the same skillet, add the honey, soy sauce, apple cider vinegar, Dijon mustard, and minced garlic.
– Bring the mixture to a simmer and cook for about 2-3 minutes, stirring constantly, until the glaze has thickened slightly.

– Return the cooked pork bites to the skillet and toss to coat them evenly with the glaze.
– Cook for an additional 1-2 minutes until the pork bites are well coated and heated through.
