Cheesy Corn and Beef Dip
Ingredients:
- 1 tablespoon olive oil
- 1/2 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 cup diced tomatoes (canned or fresh)
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper, to taste
- 2 cups shredded cheddar cheese
- 1/2 cup cream cheese
- 1/4 cup milk
- Fresh cilantro, chopped for garnish
Instructions:
- Cook the Beef:
- Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula.
- Add Aromatics:
- Reduce heat to medium. Add the chopped onion and minced garlic to the skillet with the beef. Cook until the onions are translucent.

- Melt the Cheeses:
- Reduce heat to low. Add the shredded cheddar cheese, cream cheese, and milk to the skillet. Stir until the cheeses are melted and the mixture is smooth.
- Serve:
- Transfer the dip to a serving bowl and garnish with chopped cilantro. Serve warm with tortilla chips for dipping.
