Ingredients:

  • 1 tablespoon olive oil
  • 1/2 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/4 cup milk
  • Fresh cilantro, chopped for garnish

Instructions:

  1. Cook the Beef:
    • Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula.
  2. Add Aromatics:
    • Reduce heat to medium. Add the chopped onion and minced garlic to the skillet with the beef. Cook until the onions are translucent.
  3. Mix in Vegetables:
    • Stir in the corn and diced tomatoes. Season with chili powder, cumin, salt, and pepper. Cook for about 5 minutes, allowing the flavors to meld.
  4. Melt the Cheeses:
    • Reduce heat to low. Add the shredded cheddar cheese, cream cheese, and milk to the skillet. Stir until the cheeses are melted and the mixture is smooth.
  5. Serve:
    • Transfer the dip to a serving bowl and garnish with chopped cilantro. Serve warm with tortilla chips for dipping.
