Vegetable and Bacon Chowder Recipe
Ingredients:

- 4 slices of bacon, chopped
- 1 tablespoon butter
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 stalks celery, diced
- 3 potatoes, peeled and cubed
- 1/4 head of cabbage, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped green onions and parsley for garnish
Instructions:
- Render the bacon: In a large pot, cook the bacon over medium heat until crisp. Remove bacon and set aside, leaving the fat in the pot.
- Cook vegetables: Add butter to the bacon fat, then add onion and garlic. Cook until onions are translucent. Add carrots and celery, cooking until they start to soften.
- Simmer the soup: Add potatoes, cabbage, and broth. Bring to a boil, then reduce heat and simmer until the vegetables are tender, about 20 minutes.
- Finish with cream: Stir in the heavy cream and season with salt and pepper. Cook for another 5 minutes until everything is heated through.
- Serve: Ladle the chowder into bowls. Garnish with crisp bacon, green onions, and parsley.
