Vegetable and Bacon Chowder Recipe

 

 

 

 

Ingredients:

  • 4 slices of bacon, chopped
  • 1 tablespoon butter
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 3 potatoes, peeled and cubed
  • 1/4 head of cabbage, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped green onions and parsley for garnish

Instructions:

  1. Render the bacon: In a large pot, cook the bacon over medium heat until crisp. Remove bacon and set aside, leaving the fat in the pot.
  2. Cook vegetables: Add butter to the bacon fat, then add onion and garlic. Cook until onions are translucent. Add carrots and celery, cooking until they start to soften.
  3. Simmer the soup: Add potatoes, cabbage, and broth. Bring to a boil, then reduce heat and simmer until the vegetables are tender, about 20 minutes.
  4. Finish with cream: Stir in the heavy cream and season with salt and pepper. Cook for another 5 minutes until everything is heated through.
  5. Serve: Ladle the chowder into bowls. Garnish with crisp bacon, green onions, and parsley.
