Ingredients:

  • For the Cupcakes:
    • 1 1/2 cups all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • 1/2 cup milk
  • For the Vanilla Cream Filling:
    • 2 cups milk
    • 1/2 cup granulated sugar
    • 4 egg yolks
    • 1/4 cup cornstarch
    • 1 teaspoon vanilla extract
  • For the Chocolate Ganache:
    • 1 cup heavy cream
    • 8 ounces semi-sweet chocolate, chopped
    • Optional: toasted marshmallow topping or whipped cream for garnish

Instructions:

  1. Make the Cupcakes:
    • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
    • In a bowl, combine flour, baking powder, and salt.
    • In another bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
    • Gradually mix in the dry ingredients alternately with milk, starting and ending with flour mixture.
    • Divide the batter among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  2. Prepare Vanilla Cream Filling:
    • In a saucepan over medium heat, combine milk and half the sugar. Bring to a simmer.
    • In a bowl, whisk together egg yolks, cornstarch, and remaining sugar.
    • Slowly pour hot milk into the egg mixture while whisking constantly.
    • Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens.
    • Remove from heat and stir in vanilla extract. Cool to room temperature, then refrigerate until chilled.
  3. Assemble Cupcakes:
    • Once cupcakes and cream filling are cool, cut a cone-shaped piece out of the top of each cupcake and fill with vanilla cream.
    • Replace the top portion of the cupcake, trimming as needed to fit.
  4. Make the Chocolate Ganache:
    • Heat the heavy cream in a small saucepan until it just begins to boil.
    • Place chopped chocolate in a bowl and pour hot cream over chocolate. Let stand for a few minutes, then stir until smooth.
    • Dip the top of each filled cupcake into the ganache, or spoon it over the top.
  5. Garnish:
    • Optional: Add a swirl of whipped cream or a toasted marshmallow on top for an extra special touch.
