Boston Cream Pie Cupcakes Recipe
Ingredients:
- For the Cupcakes:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup milk

Instructions:
- Make the Cupcakes:
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, combine flour, baking powder, and salt.
- In another bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Gradually mix in the dry ingredients alternately with milk, starting and ending with flour mixture.
- Divide the batter among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted comes out clean. Let cool completely.
- Prepare Vanilla Cream Filling:
- In a saucepan over medium heat, combine milk and half the sugar. Bring to a simmer.
- In a bowl, whisk together egg yolks, cornstarch, and remaining sugar.
- Slowly pour hot milk into the egg mixture while whisking constantly.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens.
- Remove from heat and stir in vanilla extract. Cool to room temperature, then refrigerate until chilled.
- Assemble Cupcakes:
- Once cupcakes and cream filling are cool, cut a cone-shaped piece out of the top of each cupcake and fill with vanilla cream.
- Replace the top portion of the cupcake, trimming as needed to fit.
- Make the Chocolate Ganache:
- Heat the heavy cream in a small saucepan until it just begins to boil.
- Place chopped chocolate in a bowl and pour hot cream over chocolate. Let stand for a few minutes, then stir until smooth.
- Dip the top of each filled cupcake into the ganache, or spoon it over the top.
- Garnish:
- Optional: Add a swirl of whipped cream or a toasted marshmallow on top for an extra special touch.
