Beef Queso Dip Recipe
Ingredients:

- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tomato, diced
- 1 jalapeño, seeded and finely chopped (optional for extra heat)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 1 lb Velveeta cheese, cut into cubes
- 1 cup cream cheese
- 1/2 cup milk
- Tortilla chips, for serving
Instructions:
- Cook the Beef:
- In a large skillet over medium heat, cook the ground beef until browned. Drain the excess fat.
- Add the onion, garlic, bell pepper, and jalapeño (if using). Cook until the vegetables are soft, about 5 minutes.
- Add Spices and Tomato:
- Stir in the cumin, chili powder, salt, and pepper. Add the diced tomato and cook for another 2 minutes until the tomato starts breaking down.
- Melt the Cheese:
- Reduce the heat to low and add the Velveeta and cream cheese to the skillet. Stir until the cheeses are completely melted and combined.
- Gradually add milk to reach a desired creamy consistency.
- Serve:
- Transfer the dip to a serving bowl or keep it warm in a slow cooker.
- Serve with tortilla chips for dipping.
