Marinated Cheese Cubes
Ingredients:
- Cheese:
- 400g of semi-soft cheese (e.g., mozzarella, feta, or halloumi), cut into bite-sized cubes
- Marinade:
- 1 cup extra virgin olive oil
- 2–3 garlic cloves, thinly sliced
- 1 tbsp fresh parsley, finely chopped
- 1 tsp red pepper flakes (adjust to taste)
- 1 tsp dried oregano or Italian seasoning
- 1 tsp whole black peppercorns
- 1/2 tsp salt (optional, depending on the cheese’s saltiness)
Instructions:
- Prepare the Cheese:
- Cut your chosen cheese into even, bite-sized cubes. Pat them dry with a paper towel to remove any excess moisture.
- Mix the Marinade:
- In a bowl, combine olive oil, sliced garlic, chopped parsley, red pepper flakes, dried oregano, black peppercorns, and salt (if needed). Mix well.
- Assemble:
- In a sterilized glass jar, layer the cheese cubes. Pour the marinade over the cheese, ensuring all cubes are fully submerged in the oil.
- Seal the jar tightly.
- Marinate:
- Refrigerate the jar for at least 24 hours to allow the flavors to infuse. For best results, marinate for 48 hours.
- Gently turn the jar upside down occasionally to distribute the marinade evenly.
- Serve:
- Bring the jar to room temperature before serving to allow the olive oil to liquefy fully.
- Serve with crusty bread, crackers, or as part of a charcuterie board.
- Storage:
- Keep refrigerated and consume within 7–10 days.
