Marinated Cheese Cubes

 

 

 

Ingredients:

  • Cheese:
    • 400g of semi-soft cheese (e.g., mozzarella, feta, or halloumi), cut into bite-sized cubes
  • Marinade:
    • 1 cup extra virgin olive oil
    • 2–3 garlic cloves, thinly sliced
    • 1 tbsp fresh parsley, finely chopped
    • 1 tsp red pepper flakes (adjust to taste)
    • 1 tsp dried oregano or Italian seasoning
    • 1 tsp whole black peppercorns
    • 1/2 tsp salt (optional, depending on the cheese’s saltiness)

Instructions:

  1. Prepare the Cheese:
    • Cut your chosen cheese into even, bite-sized cubes. Pat them dry with a paper towel to remove any excess moisture.
  2. Mix the Marinade:
    • In a bowl, combine olive oil, sliced garlic, chopped parsley, red pepper flakes, dried oregano, black peppercorns, and salt (if needed). Mix well.
  3. Assemble:
    • In a sterilized glass jar, layer the cheese cubes. Pour the marinade over the cheese, ensuring all cubes are fully submerged in the oil.
    • Seal the jar tightly.
  4. Marinate:
    • Refrigerate the jar for at least 24 hours to allow the flavors to infuse. For best results, marinate for 48 hours.
    • Gently turn the jar upside down occasionally to distribute the marinade evenly.
  5. Serve:
    • Bring the jar to room temperature before serving to allow the olive oil to liquefy fully.
    • Serve with crusty bread, crackers, or as part of a charcuterie board.
  6. Storage:
    • Keep refrigerated and consume within 7–10 days.
