Ingredients:

  • For the Crust:
    • 1 cup confectioners’ sugar
    • 3 cups all-purpose flour
    • 1 cup butter
    • 1 egg, beaten
    • 1 dash vanilla extract
  • For the Custard:
    • 2/3 cup sugar
    • 1 1/2 cups water
    • 9 eggs, beaten
    • 1 dash vanilla extract
    • 1 cup evaporated milk

Instructions:

  1. Make the Dough:
    • Mix together the confectioners’ sugar and flour in a bowl.
    • Blend in the butter with a pastry blender or two knives until the mixture resembles coarse crumbs.
    • Add the beaten egg and vanilla extract, mixing just until the dough forms a ball. Don’t overwork the dough.
    • Refrigerate the dough while making the custard.
  2. Prepare the Custard:
    • Combine sugar and water in a saucepan, and bring to a boil. Cook until the sugar is dissolved. Remove from heat and let it cool to room temperature.
    • Strain the eggs through a sieve, and add the sugar water and evaporated milk. Mix well, then strain again to ensure it’s smooth. Add a dash of vanilla extract.
  3. Shape the Tarts:
    • Roll out the dough and cut out rounds. Press the rounds into tart molds. Make sure the dough comes to the edges of each mold.
    • Pour the custard into the dough shells.
  4. Bake:
    • Preheat your oven to 375°F (190°C).
    • Place the tarts in the oven and bake for 15-20 minutes or until the crust is golden and the custard is set but still jiggly in the center.
  5. Cool and Serve:
    • Let the tarts cool in the pans for a few minutes, then remove and cool on a wire rack.
    • Serve the tarts warm or at room temperature.
