Steak with Creamy Mushroom Sauce

Ingredients:
- Steak:
- 2 steaks (such as ribeye, sirloin, or filet mignon), about 1 inch thick
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- Mushroom Sauce:
- 1 tablespoon butter
- 1/2 pound mushrooms, sliced (such as cremini or button)
- 2 cloves garlic, minced
- 1 shallot, minced
- 1/2 cup beef broth
- 1/2 cup heavy cream
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- Fresh herbs (such as thyme or parsley), chopped
- Salt and pepper to taste
Instructions:
- Prepare the Steak:
- Season the steaks generously with salt and pepper.
- Heat the olive oil in a skillet over medium-high heat. When the oil is hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.
- Remove the steaks from the skillet and let them rest.
- Make the Mushroom Sauce:
- In the same skillet, reduce the heat to medium and add the butter.
- Once melted, add the sliced mushrooms and sauté until they are browned and tender, about 5-7 minutes.
- Add the garlic and shallot, and cook until fragrant, about 1 minute.
- Pour in the beef broth to deglaze the pan, scraping up any browned bits from the bottom of the skillet.
- Stir in the heavy cream, Dijon mustard, and Worcestershire sauce. Bring to a simmer and cook until the sauce thickens slightly, about 3-4 minutes.
- Season with salt and pepper to taste, and stir in the fresh herbs.
- Serve:
- Place the steaks on plates and spoon the mushroom sauce over the top.
- Garnish with additional herbs if desired.
