Sweet Chili Sauce

 

This home restaurant recipe for Sweet Chili Sauce is garlicky, spicy, sweet and slightly spicy. Spring rolls, egg yolks and eggs should not be soaked. Or serve with grilled meat, chicken, seafood and vegetables. We also love it as a starter with cottage cheese and yogurt!

2 cups wine vinegar
2 cups sugar
4 tablespoons red jalapeño, red Fresno, or red serran oper, stem removed, peeled
6 cloves garlic, crushed and minced
1/4 cup plus 2 tablespoons Clear Gel cleanser (see below)

Directions
In a small saucepan, whisk together 2 cups water, rice wine vinegar, sugar, and salt. , pepper and garlic; Bring the mixture to a boil. Boil for 5 minutes.
While the sauce is cooking, mix the remaining 1/3 cup of water with the cornstarch.
While whisking the sauce, pour the cornstarch mixture into the pan; Continue stirring and bring the mixture to a boil again. Reduce heat to low and cook for 1 minute.
Use a towel to pour the sauce into 8 glass jars, leaving 1/4 inch of the top free. Use chopsticks to remove excess air and adjust level with additional sauce if necessary.
Wipe a paper towel with vinegar and wipe the rims of the jars. Place the lids on the jars and seal tightly.
If you are going to use it immediately, wait for it to cool completely and enjoy. Or store them in the refrigerator for up to 3 weeks. INSTRUCTIONS FOR USE: Using non-slip wires, transfer the sealed jars into a bowl of boiling water, covering the jars by approximately 5 cm. Replace the lid of the pot, bring the water to a boil again and cook for 10 minutes. Clean the jars, label them, and store them in a dark place for up to 6 months. Once opened, the sauce can be stored in the refrigerator for up to 3 weeks.

Clear Gel is not the same as Sure Gel. Make sure you use Clear Gel or ThermFlo gel.
Don’t have a pot? This is true! Just use a large, full pot and make sure the boiling water covers the pots by 2 inches. Fly! Line the bottom of your pot with a clean plate to reduce rust on the bottom of the iron.
Prepare an extra jar or two. Storage can sometimes be difficult and often result in more than expected.
