Ingredients:

  • For the Chicken:
    • 4 boneless, skinless chicken breasts
    • Salt and pepper, to taste
    • 2 tablespoons olive oil
    • 2 tablespoons butter
  • For the Sauce and Vegetables:
    • 1 cup fresh mushrooms, sliced
    • 2 cloves garlic, minced
    • 1/2 cup sun-dried tomatoes, chopped (optional)
    • 4 cups fresh spinach leaves
    • 1 cup heavy cream
    • 1/2 cup chicken broth
    • 1 teaspoon Italian seasoning
    • 1/2 cup grated Parmesan cheese
    • 4 slices bacon, cooked and crumbled (optional for garnish)

Instructions:

  1. Prepare the Chicken:
    • Season the chicken breasts with salt and pepper.
    • In a large skillet, heat olive oil and butter over medium heat.
    • Add the chicken breasts to the skillet and cook until golden on each side and cooked through (about 6-8 minutes per side, depending on thickness). Remove the chicken and set aside.
  2. Cook the Vegetables:
    • In the same skillet, add the sliced mushrooms and cook until they begin to brown.
    • Add the minced garlic and sun-dried tomatoes (if using) and sauté for another minute until fragrant.
  3. Make the Sauce:
    • Add the spinach to the skillet and cook until it begins to wilt.
    • Pour in the heavy cream and chicken broth. Bring to a simmer.
    • Stir in the Italian seasoning and Parmesan cheese. Cook until the sauce begins to thicken.
  4. Combine and Serve:
    • Return the chicken to the skillet. Spoon the sauce and vegetables over the chicken.
    • Cook for another 2-3 minutes to ensure the chicken is heated through and everything is well combined.
    • Garnish with crumbled bacon before serving.
