Easy Mexican Street Corn
Ingredients:
6 ears of fresh sweet corn
6 tablespoons mayonnaise
½ teaspoon garlic powder

1 cup crumbled cotija cheese
6 tablespoons chopped fresh cilantro
1 teaspoon chipotle chili powder
2 limes, quartered
PREPARATION:

9 87 Preheat oven to 350 degrees F. Place corn husks directly on oven rack. Bake for 35-40 minutes or until tender.
While the corn is cooking, in a small bowl, combine the garlic powder and mayonnaise.
When the corn is cooked, spread with garlic mayonnaise.Roll in Cotija cheese.
Sprinkle with coriander and chili powder.
Squeeze with fresh lime juice if necessary.
