Spinach and Cheese Quiche

 

 

 

Ingredients:

**For the Crust:**
– 1 9-inch pie crust (store-bought or homemade)

**For the Filling:**
– 1 tablespoon olive oil
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 5 oz (140g) fresh spinach leaves
– 4 large eggs
– 1 cup (240ml) heavy cream
– 1/2 cup (120ml) milk
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 teaspoon ground nutmeg
– 1 cup shredded cheese (cheddar, gruyere, or your favorite)
– 1/4 cup crumbled feta cheese (optional)
– Red pepper flakes (optional, for garnish)

Instructions:

 

1. **Preheat the Oven:**
– Preheat your oven to 375°F (190°C).

2. **Prepare the Crust:**
– If using a store-bought pie crust, unroll it and fit it into a 9-inch pie dish.
– Trim any excess dough and crimp the edges if desired.
– Place the crust in the refrigerator to chill while preparing the filling.

3. **Cook the Spinach:**
– Heat the olive oil in a large skillet over medium heat.
– Add the chopped onion and cook until softened, about 3-4 minutes.
– Add the garlic and cook for another 1 minute until fragrant.
– Add the spinach leaves and cook, stirring occasionally, until the spinach is wilted, about 2-3 minutes.
– Remove from heat and let it cool slightly. Drain any excess liquid.

4. **Prepare the Filling:**
– In a large mixing bowl, whisk together the eggs, heavy cream, milk, salt, pepper, and nutmeg.
– Stir in the shredded cheese.

5. **Assemble the Quiche:**
– Spread the cooked spinach mixture evenly over the bottom of the prepared pie crust.
– Pour the egg and cheese mixture over the spinach.
– If using feta cheese, sprinkle it over the top.
– Optionally, sprinkle some red pepper flakes on top for a bit of heat.

6. **Bake the Quiche:**
– Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.
– If the crust starts to brown too quickly, cover the edges with foil.

7. **Serve:**
– Let the quiche cool for about 10 minutes before slicing and serving.
