  1. Prepare the Potatoes:
    • Peel the potatoes and cut them into even sticks to ensure uniform cooking.
    • Place the cut fries into a large bowl of cold water and soak for at least 30 minutes to remove excess starch, which helps in achieving crispiness.
  2. Dry the Fries:
    • Drain the water and pat the fries dry with a clean kitchen towel. It’s important to get them as dry as possible to avoid splattering during frying.
  3. Heat the Oil:
    • Fill a large, heavy-bottomed pot about halfway with vegetable oil. Heat the oil to 300°F (150°C) using a cooking thermometer.
  4. Fry in Batches:
    • Fry the potatoes in batches, careful not to overcrowd the pot, for about 4-5 minutes per batch or until they are soft but not browned. This is the “blanching” stage that cooks the potatoes without adding color.
  5. Increase Heat:
    • Increase the oil temperature to 400°F (200°C).
  6. Second Fry:
    • Fry the blanched fries in batches again, this time until they are golden and crispy, about 5 minutes.
  7. Season:
    • Remove the fries from the oil with a slotted spoon, drain on paper towels, and season immediately with salt and any additional seasonings you like.
  8. Serve:
    • Serve hot and crispy for the best texture.
