Homemade French Fries
Ingredients:
- 4 large potatoes (Russet or Yukon Gold)
- Vegetable oil for frying
- Salt (to taste)
- Optional seasonings: garlic powder, paprika, or black pepper

- Prepare the Potatoes:
- Peel the potatoes and cut them into even sticks to ensure uniform cooking.
- Place the cut fries into a large bowl of cold water and soak for at least 30 minutes to remove excess starch, which helps in achieving crispiness.
- Dry the Fries:
- Drain the water and pat the fries dry with a clean kitchen towel. It’s important to get them as dry as possible to avoid splattering during frying.
- Heat the Oil:
- Fill a large, heavy-bottomed pot about halfway with vegetable oil. Heat the oil to 300°F (150°C) using a cooking thermometer.
- Fry in Batches:
- Fry the potatoes in batches, careful not to overcrowd the pot, for about 4-5 minutes per batch or until they are soft but not browned. This is the “blanching” stage that cooks the potatoes without adding color.
- Increase Heat:
- Increase the oil temperature to 400°F (200°C).
- Second Fry:
- Fry the blanched fries in batches again, this time until they are golden and crispy, about 5 minutes.
- Season:
- Remove the fries from the oil with a slotted spoon, drain on paper towels, and season immediately with salt and any additional seasonings you like.
- Serve:
- Serve hot and crispy for the best texture.
