How many of you remember Woolworth’s and your favorite lunch counter? They’re known for many things, including their signature freezer cheesecake (not for all the food). Friends, we don’t know how we could forget this essential piece, but we are so glad we remembered and tried to recreate the classic!

4 tablespoons lemon juice
1 (12 oz.) can evaporated milk, chilled

In a medium bowl, dissolve gelatin in boiling water. Let cool for 5-10 minutes or until slightly thickened.

While the glaze is cooling, in a medium bowl, mix 3/4 graham cracker crumbs with the melted butter, then press into the bottom of a 9×13 pan and set aside. Keep leftovers on top.
Whisk evaporated milk in a medium bowl until frothy and fluffy. 2-4 minutes.

In a separate large bowl, beat cream cheese, sugar and lemon juice until smooth. Add the jelly filling and fold into the whipped cream.
Spread the filling evenly over the base and top with the reserved graham.
Close the lid and refrigerate for at least 2 hours or overnight. Divide, serve and enjoy!
