Savory Meatballs with Gravy Recipe
Ingredients
For the Meatballs:
- 1 pound (450 g) ground beef or a mix of beef and pork
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1/4 cup parsley, chopped (plus extra for garnish)
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
For the Gravy:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
Instructions
- Prepare the Meatballs:
- In a large bowl, combine the breadcrumbs and milk. Let sit for 2-3 minutes until the breadcrumbs soak up the milk.
- Add the ground meat, egg, diced onion, minced garlic, parsley, Worcestershire sauce, salt, and pepper. Mix until well combined, but don’t overmix.
- Form the mixture into meatballs (about 1 to 1.5 inches in diameter).
- Cook the Meatballs:
- Heat olive oil in a large skillet over medium heat. Add the meatballs in batches, making sure not to overcrowd the pan.
- Cook for 6-8 minutes, turning occasionally, until browned on all sides. Transfer to a plate and set aside.
- Make the Gravy:
- In the same skillet, melt the butter over medium heat. Sprinkle in the flour and whisk continuously to form a roux. Cook for 1-2 minutes until golden.
- Gradually pour in the beef broth, whisking constantly to prevent lumps. Add Worcestershire sauce, onion powder, garlic powder, salt, and pepper.
- Let the gravy simmer for 3-5 minutes until it thickens slightly.
- Combine Meatballs and Gravy:
- Return the meatballs to the skillet and gently toss them in the gravy. Cover and simmer for an additional 5-7 minutes, ensuring the meatballs are fully cooked and infused with the gravy.
- Serve:
- Transfer to a serving dish, garnish with fresh parsley, and serve hot. Pair with mashed potatoes, rice, or crusty bread to soak up the delicious gravy.
Tips
- For extra flavor, you can add grated Parmesan cheese to the meatball mixture.
- Make-ahead option: Prepare and brown the meatballs in advance, then refrigerate or freeze them. Cook them in the gravy when ready to serve.
- To lighten the recipe, you can bake the meatballs at 400°F (200°C) for 15-20 minutes instead of frying.
