Recipe for Mango Sago
Ingredients:
- 1 cup sago pearls
- 2 large ripe mangoes, peeled and diced
- 1 cup coconut milk
- 1/2 cup milk or cream (for a richer texture)
- 1/3 cup sugar, or to taste
- 1/2 cup additional diced mango (for topping)
- Mint leaves (optional, for garnish)
Instructions:
- Prepare the Sago:
- Bring a large pot of water to boil. Add the sago pearls and cook according to the package instructions, usually about 10-20 minutes, until all pearls are translucent.
- Drain the sago and rinse under cold water to remove excess starch and prevent them from sticking together. Set aside to cool.
- Make the Mango Puree:
- Reserve half of one mango for topping and put the rest in a blender.
- Add coconut milk, milk or cream, and sugar to the blender.
- Blend until smooth. Taste and adjust sweetness if necessary.
- Combine:
- In a large bowl, combine the cooked sago pearls and mango puree. Mix gently until well combined.
- Chill:
- Refrigerate the mixture for at least 1 hour, or until chilled.
- Serve:
- Spoon the chilled mango sago into serving bowls or glasses.
- Top with the reserved diced mango and garnish with mint leaves if using.
- Optional Variations:
- For an extra fruity flavor, you can add a splash of fresh orange or pineapple juice to the mango puree.
- If you prefer a vegan version, ensure the sugar is vegan and use plant-based milk or additional coconut milk instead of cream.
