Recipe for Mango Sago

Ingredients:

  • 1 cup sago pearls
  • 2 large ripe mangoes, peeled and diced
  • 1 cup coconut milk
  • 1/2 cup milk or cream (for a richer texture)
  • 1/3 cup sugar, or to taste
  • 1/2 cup additional diced mango (for topping)
  • Mint leaves (optional, for garnish)

Instructions:

  1. Prepare the Sago:
    • Bring a large pot of water to boil. Add the sago pearls and cook according to the package instructions, usually about 10-20 minutes, until all pearls are translucent.
    • Drain the sago and rinse under cold water to remove excess starch and prevent them from sticking together. Set aside to cool.
  2. Make the Mango Puree:
    • Reserve half of one mango for topping and put the rest in a blender.
    • Add coconut milk, milk or cream, and sugar to the blender.
    • Blend until smooth. Taste and adjust sweetness if necessary.
  3. Combine:
    • In a large bowl, combine the cooked sago pearls and mango puree. Mix gently until well combined.
  4. Chill:
    • Refrigerate the mixture for at least 1 hour, or until chilled.
  5. Serve:
    • Spoon the chilled mango sago into serving bowls or glasses.
    • Top with the reserved diced mango and garnish with mint leaves if using.
  6. Optional Variations:
    • For an extra fruity flavor, you can add a splash of fresh orange or pineapple juice to the mango puree.
    • If you prefer a vegan version, ensure the sugar is vegan and use plant-based milk or additional coconut milk instead of cream.

This Mango Sago dessert is not only visually appealing but also a delightful treat that’s perfect for cooling down on a hot day or ending a meal on a sweet note. Enjoy your creation!
