Chicken Lombardy
Ingredients
8-oz package fresh mushrooms.
2 tablespoons melted butter.
6 skinless and boneless chicken fillets.
½ cup all-purpose flour.
⅓ cup oil.
½ cup chicken broth.
½ teaspoon salt.
⅛ teaspoons salt.
½ cup mozzarella cheese.
½ cup Parmesan cheese.
2 green onions.
How to Make Chicken Lombardy
In a large nonstick skillet, melt 2 tablespoons of the oil over medium heat and cook the mushrooms, stirring occasionally, for 3 to 5 minutes.
Cut whole chicken fillet in half lengthwise, place between 2 sheets of baking paper, and flatten to ⅛ inch thickness.
Coat the chicken in flour and fry in 1 or 2 tablespoons of oil in a large nonstick skillet over medium heat for 3 to 4 minutes on each side. Remove the chicken from the pan and leave the drippings in the pan.
Sprinkle the mushrooms over the chicken.
Add the meat and cook in the same way. Reduce heat and cook for 10 minutes, stirring occasionally. Season with salt and pepper and pour the sauce over the chicken.
Mix the cheese and onion in a bowl and pour over the chicken.
Bake the chicken in a preheated 450° oven for 12 to 14 minutes.
