Quinoa with corn and chives from Justatataste
Ingredients:
4 ears of corn, peeled
1 tablespoon fresh lemon zest
2 tablespoons fresh lemon juice
½ stick (¼ cup) melted unsalted butter
1 tablespoon honey
½ teaspoon salt
¼ teaspoon black pepper
2 cups raw quinoa
4 green onions, chopped
Instructions:
Place the corn in a large pot and fill with enough water to cover the corn. Cover the pot and let it boil. Once the water begins to boil, turn off the heat and leave the pot covered for 5 minutes.

Remove the corn from the pot and let it cool on a cutting board until it is easy to handle. Then use a sharp knife to cut the seeds off the cob.Prepare the dressing by whisking together lemon zest, lemon juice, melted butter, honey, salt, and pepper in a large bowl.
Rinse raw quinoa in a colander with cold water until the water runs clear.
Cook the quinoa according to the package instructions in a pot of boiling salted water.
Add the quinoa, corn kernels and chopped spring onions to the bowl with the dressing and mix until everything is well coated. Season with salt and pepper and serve.
