Carne Guisada (beef stew)
Carne Guisada or beef stew is made with large pieces of beef cooked in beer with scallions, garlic, tomatoes, cumin and coriander.
Preparation:
10 minutes oil
▢1 frying pan, chopped garlic
▢3 garlic cloves, chopped
▢2 small tomatoes, chopped
▢2 tablespoons coriander, chopped
▢1.5 pound beef, cut into small pieces
▢ 1 / 3 light alcohol
▢1/3 cup water
▢1/2 teaspoon cumin
▢1/4 teaspoon adobo or salt
▢1/2 teaspoon achiote or mace
▢1 bay leaf
▢salt to taste
▢10 oz baby red potatoes, half or half
Directions
Burner:
Heat oil in a large frying pan or heavy pot over medium heat.
Add spring onion and garlic and cook for 2-3 minutes; Add the tomatoes, coriander and a pinch of salt. Cook for another 2 minutes, stirring.
Add the beef to the pan with the wine, water, cumin, adobo, achiote, bay leaf, and salt if necessary.
Close the lid and cook on low heat for half an hour.
Check whether the meat is cooked. If not, cook for another 15 minutes.
Add the potatoes and cook until tender, 20 minutes depending on size.
Pressure Cooker Instructions: Heat the
oil in a large skillet over medium heat. Add spring onion and garlic and sauté; Like 2-3 minutes.
Add the tomatoes, coriander and a pinch of salt. Cook and stir for another 2 minutes.
Add the beef to the pan with the wine, water, cumin, adobo, achiote, bay leaf, and salt if necessary.
Pressure cooker lid; Cook on high speed with the lid closed for 45 minutes.
Add the potatoes, cover and cook over high heat for about 8 minutes or until tender. Fast release and delivery.
