Honey Glazed Pork Ribs with Pineapple

 

 

 

Ingredients:

  • For the Ribs:
    • 2 lbs pork ribs
    • Salt and pepper, to taste
    • 1 tablespoon garlic powder
    • 1 tablespoon onion powder
    • 1 tablespoon smoked paprika
  • For the Glaze:
    • 1/2 cup honey
    • 1/4 cup soy sauce
    • 2 tablespoons apple cider vinegar
    • 2 tablespoons ketchup
    • 1 tablespoon brown sugar
    • 2 cloves garlic, minced
    • 1 teaspoon ginger, grated
    • 1/2 teaspoon chili flakes (optional)
  • For Serving:
    • 1 cup pineapple, cut into chunks
    • Fresh parsley, chopped for garnish
    • Sesame seeds (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 325°F (163°C).
  2. Prepare the Ribs:
    • Season the ribs with salt, pepper, garlic powder, onion powder, and smoked paprika.
    • Place the ribs in a baking dish, cover with aluminum foil, and bake for 2 hours, or until the meat is tender.
  3. Make the Glaze:
    • In a saucepan over medium heat, combine the honey, soy sauce, apple cider vinegar, ketchup, brown sugar, minced garlic, grated ginger, and chili flakes.
    • Bring to a simmer and cook until the sauce thickens into a glaze, about 10-15 minutes.
  4. Glaze the Ribs:
    • Remove the ribs from the oven and increase the temperature to 400°F (204°C).
    • Brush the ribs generously with the honey glaze and return to the oven, uncovered.
    • Bake for an additional 20-30 minutes, brushing with more glaze every 10 minutes, until the ribs are nicely caramelized.
  5. Add the Pineapple:
    • During the last 10 minutes of baking, add the pineapple chunks around the ribs, allowing them to roast and caramelize.
  6. Serve:
    • Remove the ribs and pineapple from the oven and let them rest for a few minutes.
    • Garnish with chopped parsley and sesame seeds if using, before serving.

  • Serving Suggestion: Serve these delicious ribs with a side of steamed rice or mashed potatoes to soak up the extra glaze.
  • Marinating: For even more flavor, marinate the ribs in half of the glaze overnight before baking.
