– **For the Pork Chops:**
– 4 pork chops (bone-in or boneless)
– 2 tablespoons olive oil
– 1 teaspoon paprika
– 1 teaspoon garlic powder
– 1 teaspoon dried thyme or Italian seasoning
– Salt and pepper, to taste

– **For the Potatoes:**
– 1 1/2 pounds baby potatoes, halved
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
– 1 teaspoon dried rosemary or thyme
– Salt and pepper, to taste

Instructions

 

1. **Prepare the Pork Chops:**
– Preheat the oven to 400°F (200°C).
– In a small bowl, mix the olive oil, paprika, garlic powder, thyme, salt, and pepper.
– Rub the seasoning mixture over both sides of the pork chops.

2. **Prepare the Potatoes:**
– In a separate bowl, toss the halved potatoes with olive oil, garlic powder, rosemary, salt, and pepper until well coated.

3. **Assemble and Roast:**
– Place the seasoned pork chops and potatoes on a large baking sheet or in a roasting pan.
– Arrange the potatoes around the pork chops in a single layer.

4. **Bake:**
– Roast in the preheated oven for 25-30 minutes or until the pork chops are cooked through (internal temperature of 145°F/63°C) and the potatoes are golden and tender.
– If desired, you can broil for an additional 2-3 minutes to achieve a crispy top.

5. **Serve:**
– Let the pork chops rest for a few minutes before serving.
– Garnish with fresh herbs if desired.
