Crispy Potato Pancakes Recipe
Ingredients:
- 4 large potatoes, peeled
- 1 small onion, finely grated
- 2 large eggs
- 1/4 cup all-purpose flour (or enough to bind the mixture)
- 1/2 teaspoon baking powder
- Salt and pepper to taste
- Oil for frying (vegetable or canola)
- Fresh parsley, chopped (for garnish)
Instructions:
- Grate the Potatoes:
- Grate the potatoes using a coarse grater. Immediately place them into cold water to prevent them from turning brown.
- Drain and Squeeze Dry:
- Drain the grated potatoes well, then squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth. The key to crispy pancakes is removing as much water as possible.
- Mix Ingredients:
- In a large bowl, mix the drained potatoes, grated onion, eggs, flour, baking powder, salt, and pepper. Stir until the mixture is well combined.
- Heat the Oil:
- Pour enough oil into a large skillet to lightly cover the bottom and heat over medium-high heat.
- Form and Fry Pancakes:
- For each pancake, spoon about 2 tablespoons of the potato mixture into the skillet, flattening them with the back of the spoon to form pancakes.
- Fry until the edges are crispy and browned, about 3-4 minutes per side.
- Drain:
- Remove the pancakes from the skillet and drain on paper towels to remove excess oil.
- Serve:
- Serve hot, garnished with fresh parsley. You can also serve them with sour cream or applesauce for added flavor.
