“Herb-Crusted Fried Tomato Medallions”
Ingredients:
- 4 large firm tomatoes, sliced about 1/2 inch thick
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs, beaten
- 2 cups breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh herbs (like parsley or basil), finely chopped
- Olive oil or vegetable oil for frying
Instructions:
- Prepare the tomatoes:
- Slice the tomatoes and season each slice with salt and pepper.
- Set up three shallow bowls: one with flour seasoned with half of the salt and pepper, one with the beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese and the remaining salt, pepper, and chopped herbs.
- Bread the tomatoes:
- Dip each tomato slice into the flour to coat it lightly, then into the beaten eggs, and finally into the breadcrumb mixture, pressing the crumbs onto the slices to ensure they stick well.
- Fry the tomatoes:
- Heat a large skillet over medium heat and add enough oil to cover the bottom of the pan.
- When the oil is hot, fry the breaded tomato slices in batches, cooking them for about 2-3 minutes on each side or until golden brown and crispy.
- Drain on paper towels to remove excess oil.
- Serve:
- Serve the crispy fried tomatoes hot, garnished with additional fresh herbs if desired. They can be served alone or with a dipping sauce like ranch dressing or aioli.
