Ingredients:

3 large eggs
1 cup grated Parmesan cheese
1/2 cup canola oil
1 tablespoon minced fresh parsley
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper
3 cups sliced zucchini
1 cup baking mix
1 small onion, chopped

Directions:

• Preheat the Oven: Heat your oven to 350°F (175°C) and lightly grease a 9-inch deep-dish pie plate.
• Mix the Ingredients: In a large bowl, whisk together the eggs, Parmesan cheese, canola oil, minced parsley, garlic, salt, and pepper until well combined.
• Combine with Zucchini: Stir the sliced zucchini, baking mix, and chopped onion into the egg mixture until everything is evenly coated.
• Bake: Pour the mixture into the prepared pie plate. Bake in the preheated oven for 25-35 minutes or until the top is lightly browned and the bake is set in the center.
• Serve: Allow it to cool slightly before slicing and serving. Enjoy this savory zucchini bake as a side dish or a light main course!
