Vegetable Soup Recipe
Ingredients
– 2 tablespoons olive oil
– 1 large onion, chopped
– 2 cloves garlic, minced
– 3 medium potatoes, peeled and diced
– 2 large carrots, peeled and diced
– 1 medium zucchini, diced
– 1 cup celery, diced
– 1 cup fresh parsley, chopped
– 6 cups vegetable broth
– 1 teaspoon dried thyme
– 1 teaspoon dried oregano
– Salt and pepper to taste
– 1 bay leaf
– 1 cup chopped tomatoes (optional)
– Fresh parsley, chopped (for garnish)
Instructions
1. **Prepare the Ingredients:**
– Wash, peel, and chop all the vegetables as described.

2. **Sauté the Vegetables:**
– Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until they become translucent, about 5 minutes.
3. **Add the Vegetables:**
– Add the diced potatoes, carrots, zucchini, and celery to the pot. Cook for another 5-7 minutes, stirring occasionally.
4. **Add the Broth and Seasonings:**
– Pour in the vegetable broth, and add the dried thyme, dried oregano, salt, pepper, and bay leaf. If you’re using tomatoes, add them now. Bring the mixture to a boil.
5. **Simmer the Soup:**
– Reduce the heat to low, cover the pot, and let the soup simmer for about 25-30 minutes, or until the vegetables are tender.
6. **Finish the Soup:**
– Remove the bay leaf and stir in the fresh parsley. Adjust the seasoning with more salt and pepper if needed.
