Spicy Tomato and Vegetable Soup Recipe
Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, diced
- 2 stalks celery, diced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust based on heat preference)
- 1 teaspoon ground cumin
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 cup chopped kale or spinach
- Salt and pepper to taste
- Sour cream or yogurt for garnish
- Fresh cilantro or parsley, chopped for garnish

- Sauté vegetables: In a large pot, heat the olive oil over medium heat. Add the onion, garlic, bell pepper, carrot, and celery. Sauté until the vegetables start to soften, about 5 minutes.
- Add spices: Stir in smoked paprika, cayenne pepper, and cumin. Cook for another minute until fragrant.
- Simmer soup: Add the diced tomatoes and vegetable broth. Bring to a boil, then reduce heat to a simmer. Season with salt and pepper.
- Add greens: Stir in the kale or spinach and cook until the greens are wilted and the soup is heated through, about 10 minutes.
- Serve: Ladle the soup into bowls. Top each serving with a dollop of sour cream or yogurt and garnish with chopped cilantro or parsley.
