Spicy Tomato and Vegetable Soup Recipe

 

 

 

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 2 stalks celery, diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust based on heat preference)
  • 1 teaspoon ground cumin
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup chopped kale or spinach
  • Salt and pepper to taste
  • Sour cream or yogurt for garnish
  • Fresh cilantro or parsley, chopped for garnish

  1. Sauté vegetables: In a large pot, heat the olive oil over medium heat. Add the onion, garlic, bell pepper, carrot, and celery. Sauté until the vegetables start to soften, about 5 minutes.
  2. Add spices: Stir in smoked paprika, cayenne pepper, and cumin. Cook for another minute until fragrant.
  3. Simmer soup: Add the diced tomatoes and vegetable broth. Bring to a boil, then reduce heat to a simmer. Season with salt and pepper.
  4. Add greens: Stir in the kale or spinach and cook until the greens are wilted and the soup is heated through, about 10 minutes.
  5. Serve: Ladle the soup into bowls. Top each serving with a dollop of sour cream or yogurt and garnish with chopped cilantro or parsley.
