Grilled Chicken Wraps

 

 

Ingredients:

 

**For the Chicken Marinade:**
– 1 pound chicken breasts, cut into strips
– 2 tablespoons olive oil
– 1 tablespoon lemon juice
– 2 cloves garlic, minced
– 1 teaspoon paprika
– 1 teaspoon cumin
– 1/2 teaspoon chili powder
– Salt and pepper to taste

**For the Wraps:**
– 4 large flour tortillas
– 1 red bell pepper, sliced
– 1 yellow bell pepper, sliced
– 1 red onion, thinly sliced
– 1/2 cup chopped fresh cilantro
– 1/2 cup chopped fresh parsley

**For the Creamy Sauce:**
– 1/2 cup plain Greek yogurt
– 1/4 cup mayonnaise
– 1 tablespoon lemon juice
– 1 clove garlic, minced
– 1 tablespoon chopped fresh dill
– Salt and pepper to taste

Instructions:

 

1. **Marinate the Chicken:**
– In a large bowl, combine the olive oil, lemon juice, minced garlic, paprika, cumin, chili powder, salt, and pepper.
– Add the chicken strips to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours.

2. **Prepare the Creamy Sauce:**
– In a small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, minced garlic, chopped dill, salt, and pepper. Set aside in the refrigerator until ready to use.

3. **Grill the Chicken:**
– Preheat your grill or grill pan to medium-high heat.
– Grill the marinated chicken strips for about 5-7 minutes on each side, or until fully cooked and charred. Remove from the grill and set aside.

4. **Assemble the Wraps:**
– Warm the flour tortillas on the grill or in a dry skillet for a few seconds on each side until pliable.
– Lay each tortilla flat and layer with grilled chicken strips, sliced red and yellow bell peppers, sliced red onion, chopped cilantro, and chopped parsley.
– Drizzle with the creamy sauce.

5. **Roll and Serve:**
– Roll up each tortilla tightly, folding in the sides to secure the filling.
– Cut each wrap in half and serve immediately.
