For this baked greek meatballs and potatoes with garlic and lemon
Ingredients:
– 1 lb ground beef or lamb
– 1/2 cup breadcrumbs
– 1/4 cup parsley, chopped
– 1/4 cup onion, finely chopped
– 2 cloves garlic, minced
– 1 egg
– 1 tsp dried oregano
– Salt and pepper to taste
– 4-5 medium potatoes, cut into wedges
– 1/4 cup olive oil
– Juice of 1 lemon
– 1 tsp dried thyme
– Additional garlic cloves, whole (optional)
Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a large bowl, combine ground beef or lamb, breadcrumbs, parsley, onion, minced garlic, egg, oregano, salt, and pepper. Mix until well combined. Form into meatballs (about 1-2 inches in diameter).
3. In a large baking dish, arrange the potato wedges and sprinkle with olive oil, lemon juice, thyme, salt, and pepper. Toss to coat.
4. Place the meatballs on top of the potatoes in the baking dish. Add whole garlic cloves if desired.
5. Bake in the preheated oven for about 30-35 minutes, or until the meatballs are cooked through and the potatoes are tender and golden.
