Ingredients:

  • For the Pie Crust:
    • 1 1/4 cups all-purpose flour
    • 1/4 teaspoon salt
    • 1/3 cup shortening
    • 4-5 tablespoons cold water
  • For the Chocolate Filling:
    • 1 cup semi-sweet chocolate chips
    • 2 tablespoons butter
    • 1/2 cup sugar
    • 1/4 cup cornstarch
    • 1/4 teaspoon salt
    • 1 1/2 cups whole milk
    • 3 egg yolks
    • 1 teaspoon vanilla extract
  • For the Coconut Pecan Topping:
    • 1 cup sugar
    • 1 cup evaporated milk
    • 3 egg yolks, beaten
    • 1/2 cup butter
    • 1 teaspoon vanilla extract
    • 1 1/3 cups flaked coconut
    • 1 cup chopped pecans

Instructions:

  1. Prepare the Pie Crust:
    • In a bowl, mix flour and salt. Cut in shortening until mixture resembles coarse crumbs.
    • Sprinkle in water, one tablespoon at a time, mixing until flour is moistened and dough almost cleans the side of the bowl.
    • Gather dough into a ball, then roll out on a lightly floured surface. Transfer to a 9-inch pie plate, trim and flute edges. Chill until ready to use.
  2. Make the Chocolate Filling:
    • In a saucepan over low heat, melt chocolate chips and butter, stirring until smooth.
    • Mix sugar, cornstarch, and salt in a separate bowl. Gradually stir in milk until smooth.
    • Stir the milk mixture into the melted chocolate. Cook over medium heat, stirring constantly, until mixture thickens and boils.
    • Reduce heat; cook and stir for 2 more minutes. Remove from heat.
    • Beat egg yolks slightly; gradually stir in 1/2 cup of hot chocolate mixture. Return egg mixture to saucepan. Bring to a gentle boil; cook and stir for 2 minutes. Remove from heat.
    • Stir in vanilla. Pour into the pastry-lined pie plate.
  3. Prepare the Coconut Pecan Topping:
    • Combine sugar, evaporated milk, beaten egg yolks, and butter in a saucepan. Cook over medium heat, stirring constantly, until mixture is thickened, about 12 minutes.
    • Remove from heat. Stir in vanilla, coconut, and pecans.
  4. Assemble and Bake:
    • Spread the coconut pecan topping over the hot chocolate filling.
    • Bake at 375°F (190°C) for 25-30 minutes or until the topping is golden brown.
    • Cool on a wire rack.
  5. Serve:
    • Let the pie cool completely before serving to allow the filling to set.
