- 1 cup sugar
- 1 cup evaporated milk
- 3 egg yolks, beaten
- 1/2 cup butter
- 1 teaspoon vanilla extract
- 1 1/3 cups flaked coconut
- 1 cup chopped pecans
Instructions:
- Prepare the Pie Crust:
- In a bowl, mix flour and salt. Cut in shortening until mixture resembles coarse crumbs.
- Sprinkle in water, one tablespoon at a time, mixing until flour is moistened and dough almost cleans the side of the bowl.
- Gather dough into a ball, then roll out on a lightly floured surface. Transfer to a 9-inch pie plate, trim and flute edges. Chill until ready to use.
- Make the Chocolate Filling:
- In a saucepan over low heat, melt chocolate chips and butter, stirring until smooth.
- Mix sugar, cornstarch, and salt in a separate bowl. Gradually stir in milk until smooth.
- Stir the milk mixture into the melted chocolate. Cook over medium heat, stirring constantly, until mixture thickens and boils.
- Reduce heat; cook and stir for 2 more minutes. Remove from heat.
- Beat egg yolks slightly; gradually stir in 1/2 cup of hot chocolate mixture. Return egg mixture to saucepan. Bring to a gentle boil; cook and stir for 2 minutes. Remove from heat.
- Stir in vanilla. Pour into the pastry-lined pie plate.
- Prepare the Coconut Pecan Topping:
- Combine sugar, evaporated milk, beaten egg yolks, and butter in a saucepan. Cook over medium heat, stirring constantly, until mixture is thickened, about 12 minutes.
- Remove from heat. Stir in vanilla, coconut, and pecans.
- Assemble and Bake:
- Spread the coconut pecan topping over the hot chocolate filling.
- Bake at 375°F (190°C) for 25-30 minutes or until the topping is golden brown.
- Cool on a wire rack.
