- Prepare your ingredients and equipment:
- Before you begin, measure all the ingredients.Keep the butter and cream at room temperature and have them on hand as the process can be quick once the sugar begins to caramelize.
- Use a medium to large, heavy-bottomed pot to give the sugar enough room to expand and prevent burning.
- CARAMELIZE SUGAR:
- Pour the sugar evenly onto the bottom of the pot. Heat over medium-low heat.When the sugar begins to melt, begin whisking or stirring with a wooden spoon or heatproof spatula.
- Continue cooking and stirring gently, making sure all the sugar crystals melt and the sugar turns a deep amber color. This process can take between 5 and 10 minutes. Be careful not to burn the caramel.
3.ADD BUTTER:
- Once the sugar has completely melted and turned a deep amber color, add the butter pieces. The mixture will bubble heavily, so be careful.
- Add butter to caramel until completely melted, about 2 to 3 minutes.
- FIRST ADD THE THICKENED CREAM:
- Slowly drizzle in the cream while stirring the caramel mixture.Be careful as the mixture will bubble and evaporate when you add the cream.
- Once all the cream is incorporated, let the mixture cook for 1 minute. As it cooks it should rise in the pot.
- ADD SALT:
- Remove the pot from the heat.Add the sea salt. Taste and add a little more salt if you prefer a saltier caramel.
- COOL AND STORE:
- Allow the caramel to cool in the pan for a few minutes before transferring to a heatproof jar or container. It thickens significantly as it cools.• Allow the caramel to cool completely before covering and storing. It will keep in the fridge for up to 2 weeks. Warm slightly before using for drizzling or pouring.
